Today, Pho is a widespread dish that we all know and we would like to relish it every day. Nonetheless, have you ever wondered about the time of creating Pho in the past? Where was it born? Is it Hanoi or Nam Dinh? How long has Pho been excited? You will find answers about Pho after reading this article.
When did we have Pho?
The word Pho officially appeared for the first time in the Vietnamese dictionary (1930) compiled by Khai Tri Tien Duc Hanoi Association. The age of pho is probably more than 100 years. There is a lot of evidence that Pho appeared around the 1900s.
Everyone knows pho, but few people recognize the origin
- Nguyen Cong Hoan (1903-1977) noted that he was occasionally able to enjoy a bowl of Pho for a few cents from street vendors in 1913.
- Nguyen Van Vinh (1882-1936) also mentioned in a letter that he remembered the taste of Pho from Paris when his family and he moved to France in 1906. The sound of street vendors selling Pho every morning made him miss his hometown a lot.
- A French researcher (G. Dumoutier) who studied Vietnamese culture also affirmed that the traditional version of Pho appeared after 1907.
- A French artist described how great Hanoi Pho was in 1913.
Other historians also agree that Pho was invented in the late 19th century in the North.
Nam Dinh – the origin of the quintessential Pho
The standard of Pho converges to all of the most typical points in Vietnamese cuisine. Do many people think that the origin of Pho is Hanoi? Is that true? Pho appeared in Nam Dinh Province for the first time with a lot of street vendors.
Cho Vieng is the birthplace of this dish. The province has several lush paddle fields with nice weather and peaceful villages. Nam Dinh is also an agricultural area with favorable terrains and green rice fields. Thus, many chefs who cook delicious Pho are born in Nam Dinh.
Broth is the essence of Pho
Pho in Nam Dinh is different from Hanoi. What makes it different? They are broth and beef. Well, the beef is thinly sliced and stir-fried with garlic and veggies. When the broth is hot, you should place the meat on top and pour the broth.
In Nam Dinh, the Pho bowl is a little bit more sophisticated than the version in Hanoi. Hanoi people focus on broth while Nam Dinh people pay attention to beef. Additionally, Hanoi locals do not add herbs and bean sprouts to the bowl.
Although there is a slight difference between the bowl of Nam Dinh and Hanoi, the standard has a common thing: you should draw attention to the broth meticulously. From the marrow, it makes the broth sweeter in taste. However, you need to cook it for several hours. The broth also should not be cloudy without floating fat. The seasoning should not be harsh with a slight smell.
3 regions of the country, each has a unique feature
Originating from Nam Dinh province and Hanoi City; we could see Pho in any street vendors. In the 1950s; Pho moved to the Center and Southern regions. Today, Pho has many new versions and names. We might find that locals in 3 regions have different styles and tastes.
- In the North: Pho has a salty taste in the broth.
- In the Central region (especially Hue): Pho has a sweet taste in the broth.
- In the South (especially Saigon): Pho has a sweet taste in the broth with plenty of vegetables, including bean sprouts.
