What are you waiting for? Let’s start to cook delicious Vietnamese Bun Bo Hue right now.
Step 1: If you want the dish to be more delicious, marinate the meat in advance to make it burst with flavor.
Put all the meat together with half a bowl of diluted shrimp paste, minced shallots, lemongrass and ginger with 2 tablespoons of each. Add 2 tablespoons of sugar, 1 tablespoon of salt and half a tablespoon of MSG. Marinate the meat in 15 minutes and it is ready to be stewed.
Note: The beef will be tough and take longer to cook than pork. Therefore, it has to be cooked separately to give out fully cooked meat and a clear broth.
Fill the bottom of the pot with lemongrass, ginger and a proper amount of water. Next, put all the bones, rolled beef shank, brisket and tendon and bring it to a boil. When the water has boiled, lower the heat and cook for another 20 minutes until the meat is tender. Then turn off the heat, take the shank and brisket out then soak them into the ice bath immediately.

Tasty broth makes a delicious dish
After the two complicated steps, simply mix the pork bone broth with the beef one, then add 3 liters of water in order to serve a whole family. Add 3 tablespoons good fish sauce, 2 tablespoons salt, 2 tablespoons sugar, 2 tablespoons MSG and half a bowl of diluted shrimp paste, then bring it to a boil.
In order to make the noodle look fancy, stir-fry 1,5 tablespoon minced lemongrass with 1 tablespoon minced garlic and add in 3 tablespoons cashew oil. Pour the mixture in the bone broth.
In addition, if you and your family love a bit of spiciness to tackle your tastes, add some Vianco sate oil to the stir-fried mixture. For families with children, limit the use of chillies or sate since they cannot handle the heat.
5. The stock has reached a boiling point, you can begin assembling your dish
After submerging the shank and brisket in the ice bath, you can cut it into bite-sized slices; pork trotters can also be chopped up into chunks. Put the noodle in first, followed by the shank, the brisket, the pork trotters and roasted cinnamon pork. Onions and scallions can be put on top to create a more eye-catching color for the dish. Nearly fill the bowl with the steaming broth and now the whole family can enjoy it together.
Vegetables, bean sprouts, shaved banana flower, shaved water spinach, lemon and chillies can be used as complements depending on each members’ palate.
